(HUDSON, N.Y.) – Eat the Farm, a farm greenhouse dinner bringing together the culinary talents of Helsinki Hudson executive chef Hugh Horner and the summer bounty of Holmquest Farms, will take place on Thursday, July 25, 2013, at 7pm, in the Holmquest Farms greenhouse at 516 Spook Rock Rd.

Eat the Farm reverses the familiar, trendy equation of farm-to-table, literally bringing the table to the farm, in order to strengthen and enhance the connection between what is on our plates and where it comes from. The entire meal will be sourced from Holmquest Farm’s fields and livestock.

“I couldn’t think of a more profound way to underline the relationship between local farms and local kitchens than by serving a meal right where it all begins,” says Chef Horner. In the kitchen at Helsinki Hudson, Horner has been an advocate of farm-to-table sourcing from day one. Horner often begins his day at area farms – and often at Holmquest – selecting the freshest farm produce and building daily specials around what begins that day in the ground.

“Holmquest is a beautiful farm and the greenhouse is the perfect setting that speaks eloquently if silently to this essential, synergistic relationship,” says Horner, who will design the menu for the four-course, sit-down meal based upon what is popping out of the ground that day at Holmquest Farms.

Tickets are $65 for the four-course dinner and $80 for a four-course meal with four wines. Seating is limited and advance reservations are recommended and required by calling Helsinki Hudson at 518.828.4800.
