(BECKET, Mass.) – For the month of August, Hilltown Hot Pies, a pizza pop-up restaurant, has landed at Dream Away Lodge, serving up handmade, Neapolitan-inspired sourdough pizza.
Rafi Bildner, a trained pizzaiolo who has honed his pizza-making skills under some of the best pizza chefs in the world, has returned home to the Berkshires for the month of August to craft his pizzas under the beautiful Becket evening sky out back behind the Dream Away, highlighting the local Berkshire bounty of the week, Wednesday-Saturday nights.
A chef and graduate of Le Cordon Bleu, a farmer and an outdoor guide, Bildner currently manages a renowned sourdough pizza shop in San Francisco. Baked in his super-hot gas-powered mobile pizza oven, Rafi produces Neapolitan-style pizzas that have a fluffy crust with the aromatic flavors of sourdough and a beautiful char from a high-temp bake.
No reservations are needed nor accepted. Customers need only stop on by, grab a pie, a drink from the Dream Away bar, and enjoy live music in front of the fire or meander around the beautiful grounds, pizza in hand.
